BRIEF NOTES:
Smoked salmon: I forgot to mention in the recent Co-op news that we also have hot and cold (lox) Alaskan smoked sockeye salmon for the usual price of $12.00/lb. It is vacuum-packed in roughly 1/2/lb packages.
Halibut: I have not given up on finding quality, reasonably priced halibut. IF I am able to bring it here, I will let you all know by October 15 and arrange delivery to you. Sorry for the uncertainty.
√-Do not fret if you can’t make the above pick-up times. I plan to carry salmon through winter (I was out April 31st last spring) and we can make alternate delivery arrangements as needed.
PICK-UP SCHEDULE
SANDPOINT: I expect to have salmon here for delivery in Sandpoint the weekend after Labor Day. The preliminary distribution will be for three days at 448 S. Ella (NW corner of Ella and Erie—a few blocks from the Festival site) on:

THE WHY AND WHAT:
Wild salmon is my passion because of its taste and health benefits. My intention is to help educate and make this amazing food available to more people at the lowest possible prices. The salmon comes from the only all-refrigerated fleet in Bristol Bay. The boats are captained by fishermen who share the vision of the highest attainable quality.
There are five species of wild salmon that return to Alaska from the deep North Pacific ocean each year. Along with King (Chinook) salmon, Sockeye (Red) are the best tasting salmon with the most omega-3 oil. It is the true Prince.
2010 CO-OP NEWS:
• VITAMIN D: Wild salmon is one of the highest natural sources of vitamin D—perfect for north Idaho in winter—with 360 IU per 3.5 oz.
• FRESH-VS-FROZEN: There is more of an environmental impact in keeping fresh fish cold and flying them around the globe versus flash-freezing fish and moving them by barge, truck or rail.
• FOR THOSE IN A RUSH—or who forget to take the fish out to thaw—check out <cookitfrozen.com> and discover ways to cook salmon straight from the freezer.
• A GRADE: Of the nations eight fishery management councils, the Ocean Conservancy gave the North Pacific council the only A grade for the sustainability and overall health of the Alaskan fish stocks.
• THE MARKET: It was another healthy run of salmon into Bristol Bay this year. Disease has infested major farmed fish sources like Chile and Norway, thus demand for wild salmon has skyrocketed; the bad news is that the cost has taken a jump larger than any I have seen in a long time. I am distressed about the additional $.50 cents that has been added to our cost of the salmon, especially in this economic climate where many are struggling. Although significantly below the cost in retail stores (if you see cheaper salmon it is probably pink, coho or chum) I have to add the cost on to our price or it will be difficult to keep the business going.
• QUALITY: With further improvements in processing and handling on the boats: near 100% bleeding and padded decks to prevent bruising, I am pleased that the quality has gone even another notch upward.
• HALIBUT: Like salmon, it has rocketed in cost. At this time I am not planning to carry halibut unless I can find a reasonable source.
AVAILIABILITY: I plan on carrying enough salmon inventory to have it available into spring, 2011. Winter Ridge also usually carries our salmon for smaller quantities. Call or email me for delivery.

No need to pre-order fish.
√√--There is a 10/lb minimum total order size. Salmon fillets vary from 1 to 2/lbs; portions are about 1/2/lb with two to a package. A usual serving is 6-8-ounces (save enough for mayo lunch recipe).
√√--Included in each order are my five favorite delicious recipes (barbeque, Thai, Cajun, classic lunch) plus handling and cooking tips to make your salmon experience easy and painless. Plus, my book Wind, Waves and a Suicidal Boat.
